How to ...

make calissons ...Calissons are traditional French sweets consisting of candied fruit like melons or oranges and ground almonds. They are almost always topped with a layer of royal glaze. They look like marzipan but they taste fruitier. Calissons are traditionally linked with Aix-en-Provence in France.




I mixed apricots with almonds, a teaspoon of honey and icing sugar until I got a paste that I could roll out on a plate. Try to roll the paste until it's a little less than 1 cm.
Then use any circular shape form to make the cut-outs and cut each circle again into almond shaped mini pastries. Let them rest for a night and top them off with tick icing paste and decorate with edible goodies from your local cupcake store ...
