Asparagus à la Flamande


Due to a post Dedene did, I'm giving her and you guys a recipe for a change.
Asparagus are vegetables that - if well prepared - are a feast for your senses.
Hope I will do a translation on the recipe that makes Jamie Oliver jealous ....:-)

You would need (for 4 pers):
24 large asparagus
4 hard boiled eggs
parsley (1/2 a bouquet)
150g of non salty butter
pepper/salt
freshly grated nutmeg

Peel the asparagus and break off the 'woody' end. Boil them significantly 'al dente' in salted water. Peel the eggs and crush them with a fork. Cut the parsley fine and mix with the eggs and season with nutmeg, pepper and salt.
Let the butter melt and use a spoon to top the white layer off (the butter). Pour the clarified butter to the eggs and mix well. Arrange the asparagus on the plates and gently pour the parsley and eggs mix over the asparagus (as seen in the picture)...

I've seen recipes for Asperges à la Flammande but have never tried one. Your recipe looks delicious. Thanks for another way to eat asparagus.

You must peel them yourself, lazy!

Mmmm..looks delicious! I will try this for sure. I don't eat meat so eating lots of vegetables makes me need some new ways to prepare them, so that it doesn't get boring. This looks yum!

I love asparagus, but it makes my pee smell concentrated for some reason. Its gross and strange.

I was thinking on 'should I add this in the post, but I thought to myself ...nah, I'm gonna stay polite this time ...but, very true..you smell like hell...so extra tip : If you're having a HOT date, NO ASPARAGUS !!
